Why your number may differ

Pans, cooking times and spices need judgement when you scale by a lot. Double a recipe and the pan size may need to double too.

Does everything scale evenly?

Not always. Salt, spices, raising agents and cooking time do not scale in a straight line, so taste and adjust.
